Peanut Butter Banana Granola Bars

Store-bought granola bars can be high in added sugar, so I wanted to make a sweet treat that is a good source of fiber while having less added sugar than many traditional granola bars. This recipe uses egg, peanut butter, ripe banana, and a touch of honey as the binders. The banana helps naturally sweeten the bars without needing as much honey, while oats and chia seeds provide fiber.

Enjoy one on its own for a satisfying, fiber-rich snack, or pair it with plain Greek yogurt and berries to make a balanced breakfast.

Feel free to swap the mini chocolate chips out with regular chocolate chips or any other chip you like! Also, if you prefer a sweeter granola bar, increase the honey to 1/3 cup.

Ingredients

  • 3 cups oats

  • ¾ cup peanut butter

  • 4 tbsp chia seeds

  • 1 ripe banana, mashed

  • 2 eggs

  • ¼ cup mini dark chocolate chips

  • 1 tsp vanilla extract

  • ¼ cup honey

Directions

  1. Preheat oven to 350°F.

  2. In a large bowl, combine all ingredients except the mini chocolate chips. Mix until well combined.

  3. Line a 9 × 13 baking pan with parchment paper.

  4. Scoop the mixture onto the parchment paper-lined baking pan and press into an even layer.

  5. Sprinkle the mini dark chocolate chips over the mixture. Gently pressing them into the surface.

  6. Bake for approximately 15 minutes, or until set and lightly golden.

  7. Allow to completely cool before cutting into 16 servings. After baking, store in an airtight container and refrigerate for up to 1 week.
